Homemade macaroni & cheese … one of life’s creamiest pleasures. Don’t get me wrong – sometimes on a warm midnight there is a place for KD, but if you really want to get your heart pumping and your stomach aching for love…this cozy and creamy recipe will do just that.

I received this cookbook as a gift & it has some of the simplest and most delicious recipes I have made! Oh. Dear. Goodness…it’s good!
I actually think I have all of her cookbooks…they are THAT good.

So anyways … I will just let you in on a few little secrets to make this dish just a teeny-tiny bit more lovely (though The Pioneer Woman can really do no wrong in my books – so cooking it just as she says is just as wonderful!)
3 Simple Steps to make this dish as glorious as glorious can be…
DIRECTIONS
Cook in a cast iron pot (if possible)
I know what your thinking & I see your eyes rolling – but cooking in cast iron pots have changed my cooking life! I don’t know the science, but everything cooks better in cast. There was little chance this recipe could get any better before, but since cooking in my cast pot, the sauce is thicker and creamier, the flavours are stronger and the noodles soak up much more goodness. The Le Creuset cast pots are an ‘investment’ – though if you LOVE to cook, they are worth it! They make a great dish, amazing, just by cooking it in this pot – I promise you, it is some kind of wizardry.
Add in garlic powder & onion powder
This is a simple one, and you can never go wrong with a few extra seasonings (most of the time). When adding the mustard powder (I use regular Dijon Mustard), stir in 1 tsp. of garlic powder & 1 tsp. of onion powder.
Add in spinach
Make Popeye proud! Of course, Macaroni & Cheese isn’t the healthiest of options…but it is so darn good & always a crowd pleasure with little ones – so adding some spinach may clear your conscious just enough to help yourself to thirds. All you have to do is put 2 cups of fresh spinach in the colander before you drain the pasta in it. The boiled water will quickly steam the spinach. Then just pour in the noodles and spinach into the sauce at once. Stir + enjoy!

So that’s it! Like I said, her recipe is pretty much foolproof but I like to do these few extra steps to ensure an extra dreamy + creamy macaroni & cheese.
